  • 2 eggs, beaten

  • 4 cups Italian seasoned breadcrumbs

  • 24 oz spaghetti sauce or marinara sauce

  • 4 cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • ½ tsp dried basil

  • Salt, for sweating the eggplant

Directions

  • Peel and slice the eggplant into thin rounds.
  • Arrange slices on paper towels, sprinkle generously with salt, and let sit for 30 minutes.
  • Rinse the eggplant thoroughly and pat completely dry.
  • Preheat oven to 350°F (175°C).
  • Place beaten eggs in one shallow dish and breadcrumbs in another.
