This warm, comforting sticky date pudding is the ultimate winter dessert, featuring a deeply moist, date-studded sponge cake drenched in a rich, buttery toffee sauce. Whether you are searching for cozy winter baking ideas or want to recreate the magic of classic British pub desserts at home, this foolproof recipe delivers pure indulgence in every bite.

Origin sticky date pudding

Although it is widely celebrated as a modern British classic (often called sticky toffee pudding in the UK), culinary historians suggest the original recipe may have been developed by Canadian air force pilots during World War II before being popularized in English country hotels. The heavy reliance on naturally sweet, softened dates—a technique highlighted in traditional date baking methods—gives the sponge its signature dark color and incredibly tender crumb.

Why I Love This Recipe

I love how the hot toffee sauce seeps right into the warm sponge, creating a beautifully gooey texture that requires almost zero decorating skills to look incredibly appetizing. It is an extremely forgiving bake, and if you follow a few basic tips for making perfect caramel sauces, you will end up with a rich, glossy butterscotch topping that you will want to pour over absolutely everything.

Ingredients

  • 1 ½ cups pitted Medjool dates, roughly chopped

  • 1 cup boiling water

  • 1 tsp baking soda

  • ¼ cup unsalted butter, softened

  • ¾ cup loosely packed brown sugar

  • 2 large eggs, room temperature

  • 1 ½ cups all-purpose flour

  • 1 tsp baking powder

  • For the Toffee Sauce: 1 cup brown sugar, ½ cup unsalted butter, ½ cup heavy cream, 1 tsp vanilla extract

Directions

  • Preheat your oven to 350°F (175°C) and generously grease an 8×8-inch square baking dish.
  • Place the chopped dates in a heat-proof bowl, sprinkle with the baking soda, and pour the boiling water over them. Let sit for 15 minutes to soften, then lightly mash them with a fork.
  • In a large separate bowl, cream together the softened butter and brown sugar until pale and fluffy. Beat in the eggs one at a time until well combined.
  • Gently fold the flour and baking powder into the butter mixture, followed by the softened date mixture (including all the liquid in the bowl). Stir until just combined.
  • Pour the batter into your prepared baking dish and bake for 35–40 minutes, or until a skewer inserted into the center comes out clean.
  • While the pudding is baking, prepare the sauce: combine the brown sugar, butter, and heavy cream in a saucepan over medium heat. Simmer for 3-5 minutes until slightly thickened, then stir in the vanilla extract.
  • Remove the baked sponge from the oven, poke holes all over the warm cake with a skewer, and pour half of the hot toffee sauce over the top. Serve warm with the remaining sauce on the side.

Notes

  • For the best texture, use fresh, plump Medjool dates rather than dry, pre-chopped varieties, as they melt into the batter beautifully.
  • You can easily make this dessert a day in advance; the flavors deepen and the sponge becomes even stickier overnight in the fridge. Just reheat before serving!
  • Serve with a generous scoop of vanilla bean ice cream or a dollop of unsweetened clotted cream to perfectly balance the rich sweetness of the sauce.
