Ingredients

  • For the Nougat Layer:

  • 1 cup fine almond flour

  • 2 tbsp pure maple syrup

  • 1 tbsp coconut oil, melted

  • 1 tsp vanilla extract

  • For the Caramel & Crunch Layer:

  • 1 cup soft Medjool dates, pitted

  • ¼ cup creamy almond butter (or cashew butter)

  • 1 tsp vanilla extract

  • ¼ tsp flaky sea salt

  • 2 tbsp warm water (to thin as needed)

  • ½ cup roasted almonds or pecans, roughly chopped (keeping it paleo-friendly instead of peanuts)

  • For the Chocolate Coating:

  • 1 cup paleo-friendly dark chocolate chips (or chopped unsweetened dark chocolate)

  • 1 tbsp coconut oil

Directions

  • Line a 9×5-inch loaf pan with parchment paper, leaving enough overhang on the sides to easily lift the bars out later.
  • In a medium bowl, mix the almond flour, maple syrup, melted coconut oil, and vanilla extract until a dough forms. Press this nougat mixture firmly and evenly into the bottom of the prepared pan.
  • In a food processor, blend the pitted Medjool dates, almond butter, vanilla extract, sea salt, and warm water until a smooth, thick caramel forms.
  • Spread the date caramel evenly over the nougat layer. Press the chopped roasted almonds firmly into the top of the caramel.
  • Place the pan in the freezer for at least 1 hour, or until the layers are completely firm.
  • Lift the block out of the pan using the parchment paper and slice it into 12 rectangular bars. Place them back in the freezer while you prepare the chocolate.
  • In a microwave-safe bowl, melt the dark chocolate chips and coconut oil in 30-second increments, stirring until smooth and glossy.
  • Dip each chilled bar into the melted chocolate, using two forks to lift it out and let the excess drip off. Place the coated bars on a parchment-lined baking sheet.
  • Return the bars to the fridge or freezer for 15 minutes to let the chocolate shell set completely before serving.

Notes

  • If your Medjool dates are slightly dry, soak them in hot water for 10 minutes and drain them well before blending to ensure a silky smooth caramel.
  • For a beautiful bakery-style finish, sprinkle a tiny pinch of flaky sea salt on top of the bars right after dipping them in chocolate before the shell hardens.
