This incredibly vibrant Watermelon granita is the ultimate thirst-quenching treat for a hot day, featuring pure, sweet fruit flavor and a brilliantly icy texture. Whether you are hosting a backyard barbecue or simply searching for refreshing summer recipes to beat the heat, this naturally dairy-free dessert feels light, elegant, and perfectly balanced. The best part is that it requires absolutely zero special equipment to make at home.

Origin Watermelon granita

The history of this icy delicacy traces back to Sicily, where ancient islanders would harvest snow from Mount Etna and flavor it with fresh lemon, fruit syrups, or rose water. Over time, this evolved into the beloved semi-frozen dessert known today, which stands apart from sorbet due to its distinctively crystalline, flaky texture. It remains a celebrated staple among traditional Italian frozen desserts, often enjoyed alongside a warm brioche bun for a classic Sicilian breakfast.

Why I Love This Recipe

I love how this recipe allows the natural, peak-season sweetness of the watermelon to truly shine without being masked by heavy creams or excessive refined sugars. It is an incredibly forgiving process that requires only three basic ingredients and a few minutes of active prep time. If you are exploring healthy, dairy-free fruit treats, this is one of the easiest and most visually stunning dishes you can prepare for your family.

Tips for the Perfect Granita

To achieve that signature fluffy, snow-like consistency rather than a solid block of ice, you must be diligent about scraping the mixture as it freezes. Taking a standard dinner fork and raking it through the semi-frozen liquid every hour is an essential dessert technique that breaks up the ice crystals as they form. Using a wide, shallow metal baking pan will also help the mixture freeze faster and give you plenty of surface area to scrape comfortably.

Ingredients

  • 6 cups seedless watermelon, cubed (about one small watermelon)

  • 3 tbsp fresh lime juice

  • â…“ cup granulated sugar (or honey/agave, adjust based on the sweetness of your melon)

  • 1 pinch of sea salt

  • Fresh mint leaves (for garnish)

Directions

  • Place the cubed watermelon, fresh lime juice, granulated sugar, and a small pinch of sea salt into a high-speed blender or large food processor.
  • Blend on high until the mixture is completely liquefied and smooth.
  • Optional step: For a perfectly smooth granita without any tiny pulp bits, pour the blended mixture through a fine-mesh strainer into a bowl, pressing the juice through with a spatula and discarding the pulp.
  • Pour the watermelon juice into a wide, shallow 9×13-inch metal or glass baking dish. The shallower the liquid, the faster and more evenly it will freeze.
  • Place the dish flat in the freezer. After 1 hour, remove the dish and use a sturdy fork to scrape the ice crystals that have formed around the edges and top, dragging them toward the center.
  • Return the dish to the freezer. Continue to scrape the mixture with your fork every 45 to 60 minutes.
  • After about 3 to 4 hours, the entire mixture should be frozen into light, fluffy, individual ice crystals.
  • Scoop the shaved granita into chilled glasses or bowls, garnish with a sprig of fresh mint, and serve immediately.

Notes

  • Adding a kick: If you want a spicy, sophisticated twist, add a tiny pinch of cayenne pepper or tajin to the blender before freezing.
  • Alcohol infusion: You can add 2 tablespoons of vodka or white rum to the mixture, but do not add more than that—alcohol lowers the freezing point, and too much will prevent your granita from setting properly.
  • Storage: Once fully frozen and scraped, you can cover the dish tightly with plastic wrap or a lid and keep it in the freezer for up to 1 week. If it hardens too much, let it sit on the counter for 5 minutes and re-scrape with a fork before serving.
