Origin Besan Chilla

The tradition of cooking savory, unleavened pancakes made from ground lentils and legumes has incredibly deep roots in the Indian subcontinent. Besan (gram flour) has long been a dietary staple, celebrated for its naturally high protein content and impressive versatility. Today, a classic savory Indian breakfast like this is globally recognized as a fantastic gluten-free alternative to traditional wheat-based pancakes, heavily championed by health enthusiasts and dietitians alike.

Why I Love This Recipe

I love how this recipe allows for endless customization without requiring any complicated prep work or fancy kitchen equipment. You can effortlessly fold in whatever vegetables you have sitting in your crisper drawer—like finely chopped spinach, bell peppers, or tomatoes—making it one of the absolute best versatile healthy recipes for reducing food waste. It cooks in just a few minutes and delivers a deeply comforting, savory bite every single time.

Tips for the Perfect Batter

To achieve perfectly crisp edges rather than a dense, doughy center, giving your batter a few minutes to rest before cooking is absolutely critical. Allowing the gram flour to fully hydrate and absorb the water is a vital expert batter technique that ensures your mixture spreads thinly and evenly across the hot pan, guaranteeing a light, tender texture with a beautifully satisfying crunch.

Ingredients

  • 1 cup besan (gram flour)

  • ¾ cup water (adjust as needed for a pourable consistency)

  • ¼ cup red onion, finely chopped

  • ¼ cup tomato, finely chopped and seeded

  • 1 green chili, finely minced (optional, adjust to spice preference)

  • 2 tbsp fresh cilantro (coriander leaves), finely chopped

  • ½ tsp carom seeds (ajwain), gently crushed between your palms

  • ¼ tsp turmeric powder (for a vibrant golden color)

  • ½ tsp fine sea salt (adjust to taste)

  • 1 to 2 tbsp olive oil or ghee (for cooking)

Directions

  • In a large mixing bowl, whisk the besan (gram flour), turmeric powder, crushed carom seeds, and sea salt together to remove any large lumps.
  • Slowly pour the water into the dry ingredients while whisking continuously. Mix until you have a smooth, lump-free batter that has the consistency of standard pancake batter (not too thick, but not watery).
  • Fold the finely chopped onions, tomatoes, green chili, and fresh cilantro into the batter. Let the mixture rest for 5 to 10 minutes to allow the flour to hydrate.
  • Heat a non-stick skillet or a cast-iron tawa over medium heat. Lightly grease the surface with a few drops of oil or ghee.
  • Pour a ladleful of the batter (about ¼ cup) into the center of the pan. Using the back of the ladle, quickly and gently spread the batter outward in a circular motion to form a thin, even pancake.
  • Drizzle a few drops of oil around the edges of the chilla and let it cook for 2 to 3 minutes until the bottom is golden brown and crisp.
  • Carefully slide a spatula under the chilla, flip it over, and cook the other side for another 1 to 2 minutes until fully cooked and slightly browned.
  • Remove from the pan and repeat with the remaining batter. Serve the Cheela Recipe immediately while hot and crispy.

Notes

  • Serving Suggestions: These savory pancakes are traditionally served with fresh green mint chutney, tangy tamarind chutney, or a side of plain yogurt.
  • Batter Consistency: If your batter becomes too thick after resting, simply stir in an extra tablespoon of water until it reaches the correct pourable consistency.
  • Storage: The batter can be made up to 24 hours in advance and stored in an airtight container in the refrigerator. Cooked chillas are best enjoyed fresh, as they lose their crispness when stored.
