Ingredients

  • 4 thick-cut boneless pork chops

  • 1 ripe peach, diced

  • ½ small onion, finely chopped

  • 1 garlic clove, minced

  • ½ cup breadcrumbs (panko or regular)

  • 1 tbsp fresh rosemary or thyme, chopped

  • 1 tbsp olive oil or butter

  • Salt and pepper, to taste

  • Optional: balsamic glaze, for drizzling

Directions

  • Preheat oven to 375°F (190°C).
  • Prepare the filling: In a skillet, heat olive oil. Sauté onion and garlic until soft. Stir in peaches, herbs, breadcrumbs, salt, and pepper. Cook for 1–2 minutes until slightly softened. Set aside to cool.
  • Cut a pocket in the side of each pork chop, being careful not to slice all the way through.
  • Stuff the filling into each pork chop and secure with toothpicks if needed.
  • Season outside of chops with salt and pepper.
  • Sear the pork chops in a hot oven-safe skillet over medium-high heat, 2–3 minutes per side until golden.
  • Transfer to oven and bake for 12–15 minutes, or until internal temp reaches 145°F (63°C).
  • Let rest for 5 minutes, drizzle with balsamic glaze if desired, and serve.
