1 tsp olive oil
Pinch of salt
8 oz elbow macaroni or pasta of choice
2 tbsp butter
2 tbsp all-purpose flour
2 cups milk (whole preferred)
1 cup shredded white cheddar cheese
½ cup shredded mozzarella or Monterey Jack
¼ cup grated Parmesan
Salt and pepper, to taste
Optional: pinch of nutmeg or cayenne for extra flavor
Chopped parsley or breadcrumbs for garnish
Directions
- Preheat oven to 400°F (200°C). Slice the top off the garlic head to expose the cloves. Drizzle with olive oil, sprinkle with salt, wrap in foil, and roast for 30–35 minutes until soft and golden. Let cool, then squeeze out the roasted garlic.
- Cook pasta in salted water until al dente. Drain and set aside.
- In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1–2 minutes to form a roux. Slowly whisk in milk and bring to a gentle simmer, stirring until thickened (about 4–5 minutes).
- Stir in roasted garlic (mash it first or blend it in for a smooth sauce), then add all the cheeses. Stir until melted and smooth. Season with salt, pepper, and optional nutmeg or cayenne.
- Add cooked pasta to the sauce and stir to coat. Serve hot, garnished with parsley or toasted breadcrumbs if desired.
