Ingredients
4 salmon fillets (about 5–6 oz each)
Salt and black pepper
½ cup BBQ sauce (store-bought or homemade)
3 cups cooked rice (white, brown, or cauliflower rice)
1 cup shredded red cabbage or slaw mix
1 cup diced cucumber
1 cup cherry tomatoes, halved
1 avocado, sliced
2 green onions, sliced
Fresh cilantro or parsley, for garnish
