Ingredients
1½–2 lbs boneless, skinless chicken breasts or thighs
½ cup Asian sweet chili sauce
¼ cup low-sodium soy sauce
2 tbsp honey
2 tbsp rice vinegar
1 tbsp sriracha or chili garlic sauce (more or less to taste)
1 tbsp fresh grated ginger
3 cloves garlic, minced
1 red bell pepper, sliced
8 oz rice noodles or spaghetti, cooked according to package directions
2 green onions, sliced
2 tbsp chopped cilantro or basil (optional)
Toasted sesame seeds, for garnish
Directions
- Lightly grease the slow cooker insert.
- Place chicken in the bottom.
- In a bowl, whisk together sweet chili sauce, soy sauce, honey, rice vinegar, sriracha, ginger, and garlic.
- Pour sauce over chicken and scatter red bell pepper slices on top.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is cooked through and tender.
- Remove chicken and shred with two forks.
- Return shredded chicken to the slow cooker and stir to coat in the sauce.
- Cook noodles according to package directions. Drain well.
- Serve shredded chicken and sauce over noodles.
- Garnish with green onions, cilantro, and sesame seeds.
Notes
- For extra vegetables, stir in snap peas or shredded carrots during the last 30 minutes.
- You can also serve this over steamed rice instead of noodles.
