Ingredients

  • 1 cup bulgur wheat

  • 1 ½ cups boiling water

  • 1 cup cucumber, diced

  • 1 cup cherry tomatoes, halved

  • ½ cup red onion, finely chopped

  • ¼ cup fresh mint, chopped

  • 3 tbsp olive oil

Directions
