400g chicken pieces (boneless or bone-in)
1 cup lentils (washed)
1 onion, chopped
2 cloves garlic, minced
1 carrot, chopped
1 tbsp olive oil
½ tsp turmeric
1 tsp cumin powder
Salt and pepper to taste
3 cups water or stock
Juice of 1 lemon
Fresh coriander or parsley for garnish
Directions
- Heat oil in a pot and sauté onion and garlic until soft.
- Add chicken pieces and cook until lightly browned.
- Add carrots, lentils, turmeric, cumin, salt, and pepper. Mix well.
- Pour in water or stock and bring to a boil.
- Cover and simmer for 25–30 minutes until lentils and chicken are cooked.
- Add fresh lemon juice and stir well.
- Garnish with coriander or parsley and serve hot.
