Ingredients

  • 500g chicken pieces

  • 1½ cups rice, washed

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 tomato, chopped

  • 2 tbsp oil

  • ½ tsp turmeric

  • 1 tsp chili powder

  • 1 tsp garam masala

  • Salt to taste

  • 3 cups water or stock

  • Fresh coriander for garnish

Directions

  • Heat oil in a large pot and sauté onions and garlic until soft.
  • Add chicken pieces and cook until lightly browned.
  • Add tomatoes and spices. Cook for 3–4 minutes.
  • Add washed rice and mix well.
  • Pour in water or stock and bring to a boil.
  • Cover and cook on low heat for 20–25 minutes until rice and chicken are fully cooked.
  • Garnish with coriander and serve hot.
