1 cup basmati rice
¾ cup sugar
2 cups water
2 tbsp ghee
¼ tsp saffron strands (soaked in warm milk)
4 cardamom pods
2 tbsp chopped almonds and cashews
2 tbsp raisins
Few drops yellow food color (optional)
Directions
- Wash and soak rice for 20 minutes, then drain.
- Heat ghee in a pan and fry nuts and raisins lightly. Remove and set aside.
- In the same pan, add water and bring to a boil.
- Add rice and cook until almost done.
- Add sugar, saffron milk, cardamom, and food color if using.
- Mix gently and cook on low heat until rice absorbs syrup.
- Garnish with fried nuts and serve warm.
