  • 1 red bell pepper, diced

  • 2 cloves garlic, minced

  • 1 can diced tomatoes (or 2 cups fresh tomatoes)

  • ½ tsp cumin

  • ¼ tsp chili flakes (optional)

  • Salt and pepper to taste

  • 4 large eggs

  • 2 tbsp chopped parsley or cilantro
