Ingredients

  • 200 g block feta cheese

  • 2 cups cherry tomatoes

  • 3 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • Salt and pepper to taste

  • 8 oz pasta (penne or fusilli)

  • Fresh basil for garnish

Directions

  • Preheat oven to 400°F (200°C).
  • Place cherry tomatoes in a baking dish and drizzle with olive oil.
  • Add minced garlic, oregano, salt, and pepper and mix.
  • Place the block of feta cheese in the center of the tomatoes.
  • Bake for 30 minutes until tomatoes burst and feta becomes soft.
  • Cook pasta according to package instructions and drain.
  • Remove baking dish from oven and mash feta and tomatoes together to create a creamy sauce.
  • Add cooked pasta and mix until well coated.
  • Garnish with fresh basil and serve warm.
