Directions

  • Preheat oven to 350°F (175°C).
  • In a bowl, whisk eggs, sugar, and vegetable oil until smooth.
  • Add vanilla extract, grated carrots, and chopped dates and mix well.
  • In another bowl, combine flour, baking powder, baking soda, cinnamon powder, and salt.
