Saag Paneer Recipe

Saag Paneer Recipe

Saag paneer is one of those dishes where a relatively simple ingredient list can produce a surprisingly rich result. Paneer adds a mild, creamy contrast to the seasoned greens, while cumin, garam masala, ginger, garlic and a little cayenne build warmth without overpowering the spinach.

The key is not to treat the greens as just a background ingredient. Their texture has a major influence on the finished dish. Pulse them briefly for a more rustic saag, or blend them more thoroughly if you prefer a smoother, creamier sauce.

What Makes This Saag Paneer Work?

This recipe builds flavor in stages. The paneer is browned separately first, which gives the cubes a lightly golden exterior while keeping the inside tender. Cumin seeds, onion, garlic, ginger, tomato and spices then create the aromatic base before the greens are added.

Adding the cream near the end softens the earthy character of the spinach and rounds out the spices. The result should be thick and creamy rather than watery, but still loose enough to scoop easily with naan or spoon over rice.

Tips for Better Saag Paneer

Don’t overcook the spinach at the beginning. It only needs a few minutes to wilt before blending. The greens will continue cooking later in the sauce.

Brown the paneer gently. You are looking for a light golden surface, not a hard crust. Overcooked paneer can become rubbery.

Control the texture yourself. A few pulses in the food processor leave more texture; longer blending creates a smoother sauce.

Adjust the consistency at the end. Spinach can absorb quite a bit of liquid. If the saag becomes too thick while simmering, stir in a tablespoon or two of water until it reaches the consistency you prefer.

What to Serve With Saag Paneer

Saag paneer works especially well with basmati rice, naan or roti. For a larger Indian-style meal, it can also be served alongside dal, roasted vegetables or another curry.

Because the sauce is rich and creamy, a simple rice or flatbread is often all it needs.

Saag paneer is a rich and comforting Indian vegetarian dish made with tender paneer and a flavorful mixture of spinach, fenugreek, aromatic spices, tomato and cream. The greens are blended before being simmered with the spiced base, creating a creamy sauce that pairs especially well with naan, roti or basmati rice.

Ingredients For Saag Paneer Recipe

  • 2  bunches spinach, roughly chopped

  • 1  bunch fenugreek leaves, roughly chopped

  • 3  tablespoons canola oil, divided

  • 1/2  pound paneer, cubed

  • 1  teaspoon cumin seeds

  • 1  large onion, thinly sliced

  • 3  cloves garlic, minced

  • 1  teaspoon grated fresh ginger

  • 1  medium tomato, diced

  • 2  teaspoons garam masala

  • 1/2  teaspoon ground turmeric

  • 1/2  teaspoon cayenne pepper

  • 1/2  cup heavy whipping cream

  • salt to taste

Directions To Make Saag Paneer

  • Prepare the greens
Bring a large saucepan of water to a boil. Add the spinach and fenugreek leaves and cook for about 2–3 minutes, just until wilted. Drain thoroughly, allow them to cool slightly, then transfer to a food processor. Pulse until finely chopped or blend a little longer for a smoother sauce.
  • Brown the paneer
Heat 1 tablespoon of the oil in a large skillet over medium heat. Add the paneer cubes and cook for about 4–5 minutes, turning occasionally, until lightly golden on several sides. Transfer the paneer to a plate and set aside.
  • Build the spiced base
Add the remaining oil to the skillet. Add the cumin seeds and cook briefly until fragrant. Add the sliced onion and cook for 4–5 minutes until softened. Stir in the garlic and ginger, followed by the diced tomato, garam masala, turmeric and cayenne pepper. Cook for about 8–10 minutes, stirring occasionally, until the tomato has softened and the mixture becomes thick and aromatic.
  • Finish the saag paneer
Stir the blended greens into the skillet, followed by the paneer and cream. Season with salt to taste. Reduce the heat to low, cover and simmer gently for about 10–15 minutes, stirring occasionally. If the sauce becomes too thick, loosen it with a small splash of water. Serve warm.

Notes

  • Using the greens: Fresh mature spinach gives the saag a deeper flavor, while baby spinach produces a milder result. Frozen spinach can also be used; thaw it completely and squeeze out excess moisture before adding it to the recipe.
  • Adjusting the texture: For a rustic saag, pulse the greens only until finely chopped. For a smoother, restaurant-style sauce, blend them more thoroughly. If the finished sauce becomes too thick while simmering, add water 1–2 tablespoons at a time.
