Directions
- Prepare the Batter: In a large mixing bowl, add the besan (chickpea flour), carom seeds (ajwain), turmeric powder, red chili powder, and salt. Whisk the dry ingredients together.
- Add Water: Gradually pour in the water while whisking continuously to ensure no lumps form. You are looking for a smooth, pourable consistency that is slightly thinner than traditional pancake batter, but thick enough to coat the back of a spoon.
- Fold in Veggies: Add the finely chopped onions, tomatoes, green chilies, and fresh cilantro into the batter. Stir well to combine.
- Heat the Pan: Heat a cast-iron skillet or non-stick tawa over medium heat. Once hot, lightly grease the surface with a few drops of oil or ghee.
