Ingredients
1 cup bulgur wheat
1 ½ cups boiling water
1 cup cucumber, diced
1 cup cherry tomatoes, halved
½ cup red onion, finely chopped
¼ cup fresh parsley, chopped
¼ cup fresh mint, chopped
3 tbsp olive oil
2 tbsp lemon juice
Salt and pepper to taste
Directions
- Place bulgur in a bowl and pour boiling water over it. Cover and let sit for 15–20 minutes, until tender and water is absorbed.
