  • 12 oz fully cooked andouille sausage (or smoked sausage), sliced into coins

  • 1 medium yellow onion, chopped

  • 1 red bell pepper, chopped

  • 1 green bell pepper, chopped

  • 1 medium zucchini, sliced into half-moons

  • 2 tbsp extra-virgin olive oil (divided)

  • 1 1/2 tbsp Cajun seasoning

  • 1/2 tsp kosher salt

  • 1/4 tsp freshly ground black pepper

  • Fresh parsley, roughly chopped

  • 1 fresh lemon, cut into wedges

Directions

  • Preheat your oven to 400°F (200°C). Lightly grease a large rimmed baking sheet with non-stick cooking spray or line it with parchment paper for effortless cleanup.
