Ingredients

  • 1 cup grated carrots

  • 1 cup chopped dates

  • 1½ cups all-purpose flour

  • ¾ cup sugar

  • 2 eggs

  • ½ cup vegetable oil

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp cinnamon powder

  • 1 tsp vanilla extract

  • ¼ tsp salt

  • ¼ cup chopped walnuts (optional)

Directions

  • Preheat oven to 350°F (175°C).
  • In a bowl, whisk eggs, sugar, and vegetable oil until smooth.
  • Add vanilla extract, grated carrots, and chopped dates and mix well.
  • In another bowl, combine flour, baking powder, baking soda, cinnamon powder, and salt.
  • Gradually fold the dry ingredients into the wet mixture.
  • Stir in chopped walnuts if using.
  • Pour the batter into a greased cake pan.
  • Bake for 30–35 minutes until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool before slicing and serving.
