2 cups fresh pineapple chunks
¼ cup fresh lime juice
1 tsp freshly grated lime zest
1 cup full-fat coconut milk (canned, well-stirred)
2 tbsp pure maple syrup or agave nectar (divided)
Directions
- In a high-speed blender, combine the fresh pineapple chunks, lime juice, lime zest, and 1 tablespoon of the maple syrup. Blend until completely smooth.
- Divide the pineapple-lime puree evenly among 6 popsicle molds, filling them about two-thirds of the way to the top.
- In a small mixing bowl, whisk together the full-fat coconut milk and the remaining 1 tablespoon of maple syrup until completely smooth and combined.
- Gently pour the coconut mixture into the molds right over the pineapple layer, filling them to the top line.
- Insert your popsicle sticks, secure the lid on the mold, and place in the freezer for at least 4 hours, or until completely solid.
- When ready to eat, run the outside of the molds under warm water for about 10–15 seconds to easily release the popsicles.
Notes
- For a fun texture, you can leave a few small, unblended chunks of pineapple in the fruit puree layer.
- If you don’t have fresh pineapple on hand, frozen pineapple chunks work perfectly; just let them thaw slightly before blending so the mixture is easy to pour.
- Keep the extra popsicles stored in their molds, or unmold them and transfer to an airtight freezer bag with parchment paper between them for up to 1 month.
