kcalThese simple sausage rolls are a crowd-pleaser and perfect for parties, picnics, or casual snacking. You can easily adapt the flavour by adding different herbs, a pinch of chilli flakes, or fennel seeds to suit your taste.
Ingredients
500g/1lb 2oz ready-made puff pastry
Plain flour, for dusting
1 free-range egg, beaten
8 herby sausages, halved
Salt and freshly ground black pepper
A small handful of fresh thyme leaves
Directions
- Heat the oven to 200C/180C Fan/Gas 6.
- Lightly flour your work surface and roll out the puff pastry to a rectangle measuring about 48x32cm/19×12½in. Gently tap the pastry with a rolling pin to reduce how much it will puff in the oven.
- Slice the pastry rectangle in half lengthways, then cut each long strip into eight even pieces, giving you 16 rectangles.
- Brush one end of each pastry piece with beaten egg. Place half a sausage at the opposite end, season with salt and pepper, and sprinkle with thyme. Roll the pastry around the sausage to seal. Repeat with all pieces.
- Chill the prepared sausage rolls in the fridge for 20 minutes so the pastry firms up.
- Remove from the fridge and score the tops lightly with a sharp knife or prick with a fork. Brush generously with the remaining beaten egg.
- Bake for 25–30 minutes, or until the pastry turns crisp and golden. Allow them to cool slightly before serving. They are delicious warm but also great cold.
Notes
- Swap the thyme for sage, parsley, or rosemary for a different flavour.
- Sprinkle extra herbs or a little fennel seed on top after glazing.
- A layer of mustard or red onion marmalade under the sausage adds extra richness.
- For a tighter seal, remove the sausage casing before wrapping in pastry.
