Ingredients

  • 2 kg leg of lamb

  • 5 cloves garlic, minced

  • 2 tbsp fresh rosemary, chopped

  • 1 tbsp fresh thyme, chopped

  • 3 tbsp olive oil

  • 1 tbsp lemon juice

  • Salt and black pepper to taste

Directions

  • Preheat oven to 190°C (375°F).
  • Pat dry the leg of lamb and place it in a roasting pan.
  • In a bowl, mix garlic, rosemary, thyme, olive oil, lemon juice, salt, and pepper.
  • Rub the herb mixture all over the lamb.
  • Roast for about 1 hour 30 minutes or until desired doneness.
