Ingredients

  • 12 oz egg noodles or other pasta

  • 1 tbsp butter or oil

  • 1 medium onion, finely chopped

  • 1½ cups cooked ham, diced

  • 4 large eggs

  • Salt and black pepper, to taste

  • ½ cup shredded Swiss or Emmental cheese (optional)

  • Chopped parsley or chives, for garnish

Directions

  • Cook noodles in salted water according to package directions until just tender. Drain well.
  • In a large skillet over medium heat, melt butter. Add onion and cook 3–4 minutes until soft.
  • Stir in diced ham and cook another 2 minutes to heat through.
  • Add drained noodles to the skillet and toss to combine.
  • In a small bowl, beat eggs with a pinch of salt and pepper.
  • Pour eggs over noodles and cook, stirring gently, until eggs are just set and everything is heated through, about 3–4 minutes.
  • Remove from heat. Sprinkle with cheese if using and let it melt slightly.
