Ingredients
1 large red onion, very thinly sliced
½ tsp salt
½ tsp sugar
1 tsp Kashmiri chili powder or mild paprika
½ tsp ground cumin
2 tbsp white vinegar or malt vinegar
1 small tomato, finely chopped (optional)
1 green chili, finely chopped (optional)
1–2 tbsp chopped fresh cilantro
Directions
- Place sliced onions in a bowl. Sprinkle with salt and sugar, then toss well and let sit 5 minutes to soften slightly.
- Add chili powder, cumin, vinegar, tomato, and green chili (if using). Mix thoroughly to coat.
- Let stand at least 10 minutes before serving, or refrigerate up to 1 day for more developed flavor.
- Sprinkle with chopped cilantro just before serving.
