Indian Spiced Onions are a tangy, crunchy, and slightly spicy accompaniment often served with grilled meats, kebabs, or Indian breads. Thinly sliced onions are marinated with lemon juice, chili powder, salt, and a pinch of chaat masala or cumin to enhance their flavor. This quick-pickled salad is vibrant and refreshing, cutting through rich dishes with its sharp and zesty taste. It’s a staple in Indian street food and restaurant-style meals.

Ingredients

  • 1 large red onion, very thinly sliced

  • ½ tsp salt

  • ½ tsp sugar

  • 1 tsp Kashmiri chili powder or mild paprika

  • ½ tsp ground cumin

  • 2 tbsp white vinegar or malt vinegar

  • 1 small tomato, finely chopped (optional)

  • 1 green chili, finely chopped (optional)

  • 1–2 tbsp chopped fresh cilantro

Directions

  • Place sliced onions in a bowl. Sprinkle with salt and sugar, then toss well and let sit 5 minutes to soften slightly.
  • Add chili powder, cumin, vinegar, tomato, and green chili (if using). Mix thoroughly to coat.
  • Let stand at least 10 minutes before serving, or refrigerate up to 1 day for more developed flavor.
  • Sprinkle with chopped cilantro just before serving.

  • For extra crunch, don’t let them marinate too long before serving.
