If you are looking for the perfect dessert to feed a crowd, this Lemon Texas Sheet Cake is a bright, citrusy twist on a Southern classic. Traditionally, a Texas sheet cake is a massive, thin chocolate cake covered in a fudgy icing, but this variation swaps the cocoa for sunny lemon, making it the ultimate treat for a summer picnic or neighborhood potluck.

The Boiling Technique
What gives a Texas sheet cake its signature dense, moist texture is the unique stovetop mixing method. By bringing the butter and water to a rolling boil before mixing them into the dry ingredients, you actually partially gelatinize the starches in the flour. This process inhibits gluten formation, resulting in a supremely tender, melt-in-your-mouth crumb that stays exceptionally moist for days. The addition of rich sour cream further tenderizes the batter while balancing the overall sweetness.
Double the Citrus
To ensure the bright flavor isn’t baked out in the oven, this recipe doubles down on the citrus. It incorporates both concentrated lemon extract and the natural oils from fresh lemon zest directly into the batter. Finally, while the cake is still warm from the oven, it is drenched in a buttery, sweet-tart stovetop glaze. The hot glaze seeps slightly into the top layer of the sponge, locking in moisture and delivering a vibrant, tangy punch with every single bite.

The Lemon Cake:
1 cup butter
1 cup water
2 cups all-purpose flour
2 cups white sugar
2 large eggs
1/2 cup sour cream
1 tsp lemon extract
1 tsp lemon zest
1 tsp baking soda
1/2 tsp salt
The Glaze:
2 cups confectioners’ sugar, plus more as needed
2 tbsp 1% milk
6 tbsp salted butter
1/4 tsp kosher salt
1/2 tsp lemon extract
2 tbsp lemon zest
Directions
- Prep the Pan: Preheat your oven to 375°F (190°C). Generously grease a 10×15-inch rimmed baking pan (jelly roll pan).
- Boil the Liquids: In a large saucepan, combine the 1 cup of butter and the 1 cup of water. Bring the mixture to a rolling boil over medium-high heat.
- Mix the Batter: Remove the saucepan from the heat. Whisk in the all-purpose flour, white sugar, eggs, sour cream, 1 teaspoon lemon extract, 1 teaspoon lemon zest, baking soda, and 1/2 teaspoon salt until the batter is completely smooth and well-combined.
- Bake: Pour the batter into the prepared baking pan, using a spatula to spread it into an even layer. Bake in the preheated oven until the cake is golden and a toothpick inserted near the center comes out clean, about 20 to 22 minutes. Let the cake cool in the pan for exactly 15 minutes.
- Prep the Glaze Sugar: While the cake is cooling, place the 2 cups of confectioners’ sugar into a medium heat-proof mixing bowl.
- Boil the Glaze Liquids: In a small saucepan over medium heat, add the milk, 6 tablespoons of salted butter, and kosher salt. Bring the mixture just to a boil, stirring occasionally.
- Whisk the Glaze: Pour the boiling milk mixture directly over the confectioners’ sugar in the bowl and whisk vigorously to combine. If the glaze seems too thin, simply whisk in a little more confectioners’ sugar until you reach your desired consistency. Finally, whisk in the 1/2 teaspoon of lemon extract and the 2 tablespoons of lemon zest.
- Frost and Cool: Pour the hot glaze over the warm cake. Use an offset spatula to spread it evenly all the way to the edges. Allow the cake to cool completely in the pan (about 50 minutes) to let the glaze set before slicing into squares and serving!
Notes
- Editor’s Note: This cake is a brilliant, citrus-infused modification of Allrecipes Member Diane Kester’s highly popular “White Texas Sheet Cake” recipe.
- Zesting Tip: Always zest your lemons before you juice them! When zesting, be sure to only scrape off the bright yellow skin, avoiding the bitter white pith underneath.
- Serving Suggestion: This cake is fantastic served on its own, but it pairs beautifully with a scoop of vanilla bean ice cream or a dollop of fresh whipped cream and fresh berries.
