Ingredients

  • 1 cup all-purpose flour (maida)

  • ½ cup milk

  • 2 tbsp sugar

  • 2 tbsp semolina (sooji)

  • ¼ tsp cardamom powder

  • Water as needed

  • 1 cup sugar

  • ½ cup water

  • Few saffron strands (optional)

  • Ghee or oil as needed

Directions

  • In a bowl, mix flour, semolina, sugar, milk, and cardamom powder to form a smooth batter. Rest for 10 minutes.
  • Prepare sugar syrup by boiling sugar and water until slightly sticky. Add saffron if desired.
  • Heat ghee in a pan on medium heat.
  • Pour a small ladle of batter into hot ghee to form a pancake.
  • Fry until golden on both sides.
  • Remove and dip immediately into warm sugar syrup for 1–2 minutes.
  • Serve warm.

Notes

  • Serving: Garnish with nuts or serve with rabri for extra richness.
  • Storage: Best enjoyed fresh.
