1 cup all-purpose flour (maida)
½ cup milk
2 tbsp sugar
2 tbsp semolina (sooji)
¼ tsp cardamom powder
Water as needed
1 cup sugar
½ cup water
Few saffron strands (optional)
Ghee or oil as needed
Directions
- In a bowl, mix flour, semolina, sugar, milk, and cardamom powder to form a smooth batter. Rest for 10 minutes.
- Prepare sugar syrup by boiling sugar and water until slightly sticky. Add saffron if desired.
- Heat ghee in a pan on medium heat.
- Pour a small ladle of batter into hot ghee to form a pancake.
- Fry until golden on both sides.
- Remove and dip immediately into warm sugar syrup for 1–2 minutes.
- Serve warm.
Notes
- Serving: Garnish with nuts or serve with rabri for extra richness.
- Storage: Best enjoyed fresh.
