  • ½ tsp turmeric powder

  • ½ tsp red chili powder (adjust to heat preference)

  • ½ tsp roasted cumin powder

  • 1 tsp carom seeds (ajwain), gently crushed between your palms to release the oils

  • 1 tbsp sesame seeds (white)

  • 1 tsp fine sea salt (adjust to taste)

  • 2 tbsp neutral cooking oil (for binding the dough)

  • Extra oil or ghee (for roasting)

  • Warm water (as needed to knead the dough)

Directions

  • Prep the Greens: If using fresh fenugreek leaves, wash them thoroughly and chop them very finely. Ensure there is no excess water clinging to the leaves, as too much moisture makes the dough sticky.

  • Roll the Khakhras: Divide the rested dough into small, equal-sized balls. Dust a ball lightly with dry whole wheat flour, and use a rolling pin to roll it out into a paper-thin circle (about 6 to 7 inches in diameter). The thinner you roll it, the crispier the final result.
  • The First Roast: Heat a cast-iron tawa or flat griddle over low heat. Place the rolled dough onto the pan. Once tiny bubbles appear (about 20 seconds), flip it over.
  • Press and Crisp: Drizzle a tiny drop of oil or ghee around the edges. Using a folded cotton cloth or a wooden khakhra press, press down firmly all over the surface. Keep pressing and flipping the khakhra every 30 seconds, maintaining a very low flame.
  • Finish: Continue the pressing and roasting process for 2 to 3 minutes until the khakhra turns light golden brown, completely dry, and crisp.
