Ingredients

  • 1/2 cup Foxtail Millet (or Kodo/Little Millet)

  • 1 1/2 cups water (for cooking)

  • 1 tbsp cold-pressed oil or ghee

  • 1/2 tsp mustard seeds

  • 1/2 tsp cumin seeds

  • 1 tsp urad dal (split black gram)

  • 1 tsp chana dal (split bengal gram)

  • 10-12 fresh curry leaves

  • 1-2 green chilies, finely chopped

  • 1 inch fresh ginger, finely grated

  • 1 medium onion, finely chopped

  • 1/2 cup mixed vegetables (carrots, green peas, and french beans), finely chopped

  • 1/2 tsp kosher salt (adjust to taste)

  • 1 tbsp fresh lemon juice

  • 2 tbsp fresh cilantro, finely chopped

  • Optional: 8-10 raw cashews or roasted peanuts for crunch

Directions

  • Prep the Millet: Rinse the millet thoroughly under running water at least 3 to 4 times until the water runs completely clear. Soak the millet in fresh water for 20 to 30 minutes. (Soaking helps neutralize phytic acid and ensures a fluffy texture). Drain the water completely before cooking.
  • Sauté the Tempering: Heat the oil or ghee in a heavy-bottomed pan or skillet over medium heat. Add the mustard seeds and let them splutter. Add the cumin seeds, urad dal, chana dal, and cashews (if using). Fry for about 1 minute until the lentils turn a light golden brown.
  • Add Aromatics: Stir in the grated ginger, chopped green chilies, and fresh curry leaves. Sauté for 30 seconds until highly fragrant.
  • Cook the Vegetables: Add the chopped onions and sauté for 2 minutes until translucent. Add the mixed vegetables (carrots, peas, beans) and cook for another 2 minutes, stirring frequently.
  • Boil the Water: Pour exactly 1 1/2 cups of water into the pan and add the salt. Stir well, increase the heat slightly, and bring the water to a rolling boil.
  • Add the Millet: Once the water is boiling, slowly pour in the drained, soaked millet while stirring continuously to prevent any lumps from forming.
  • Simmer and Steam: Reduce the heat to the lowest possible setting. Cover the pan with a tight-fitting lid and let it simmer completely undisturbed for 10 to 12 minutes.
  • Rest and Fluff: Turn off the heat, but leave the lid on for another 5 minutes to allow the steam to finish cooking the grains perfectly. Remove the lid and gently fluff the upma with a fork.
  • Garnish and Serve: Drizzle the fresh lemon juice over the top and garnish generously with chopped cilantro. Serve hot with a side of coconut chutney or a warm cup of chai!

Notes

  • Water Ratio is Key: Different millets require slightly different water ratios. For a perfectly fluffy, non-sticky upma, a general rule is 1 part millet to 2.5 or 3 parts water. If you prefer a porridge-like, softer consistency, use up to 3.5 cups of water.
  • Dry Roasting: For an even nuttier flavor and to guarantee the grains stay separate, you can dry roast the rinsed and dried millet in a pan for 3 minutes before adding it to the boiling water.
