  • 1/2 tsp kosher salt

  • For the Tempering & Veggies:

  • 1 tbsp coconut oil or ghee

  • 1/2 tsp mustard seeds

  • 1/2 tsp cumin seeds

  • 1 tsp chana dal (split Bengal gram)

  • 1 tsp urad dal (split skinless black gram)

  • 8-10 fresh curry leaves

  • 1-2 green chilies, finely chopped

  • 1 tsp fresh ginger, finely grated

  • 1 medium yellow onion, finely chopped

  • 1/2 cup mixed diced vegetables (carrots, green peas, green beans)

  • 1 tbsp fresh lemon juice

  • 2 tbsp fresh cilantro, finely chopped

  • Optional: 8-10 raw cashews for extra crunch

Directions

  • Toast the Oats: Heat a wide skillet over medium-low heat. Add the oats and dry roast them for 3 to 4 minutes until they are lightly fragrant and warm to the touch. Transfer the roasted oats to a bowl, sprinkle lightly with 2 tablespoons of water, salt, and turmeric powder, toss gently with your fingers, and set aside.
  • Sauté the Tempering: Return the skillet to medium heat and add the coconut oil (or ghee). Once hot, add the mustard seeds and cumin seeds. Allow them to crackle.
  • Add Dal & Aromatics: Add the chana dal, urad dal, and raw cashews (if using). Fry for 1 minute until the lentils turn golden brown. Stir in the green chilies, grated ginger, and fresh curry leaves, cooking for 30 seconds until fragrant.
  • Cook the Vegetables: Add the chopped onions and sauté for 2 to 3 minutes until translucent. Stir in the mixed vegetables (carrots, peas, beans) and a small pinch of salt. Cover the pan with a lid and steam on low heat for 3 to 4 minutes until the vegetables are tender-crisp.
  • Combine & Steam: Uncover the pan and reduce the heat to low. Add the moistened oats to the skillet. Gently toss everything together so the spiced oil and vegetables coat the oats evenly.
  • Sprinkle an additional 1 tablespoon of water over the top if the mixture looks dry. Cover with the lid and steam on low heat for 2 to 3 minutes until the oats are heated through and fluffy. Do not overmix to prevent mushiness.
  • Finish & Serve: Remove the skillet from the heat. Drizzle with fresh lemon juice and garnish generously with chopped cilantro. Serve hot with a side of coconut chutney or a warm cup of chai!
