Ingredients

  • 2 cups chopped frozen peaches (thawed), skin removed

  • 1 cup sugar

  • 2 cups heavy cream

  • 1 cup milk (whole milk works best)

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon peach extract (optional, for a more intense flavor)

Directions

  • Prepare the Peaches: Allow your frozen peaches to thaw overnight in the fridge. Toss the thawed peaches with 1/2 cup of the sugar and set them aside to macerate for 15-20 minutes.
  • Puree: Reserve 1/2 cup of the sugared peaches, making sure not to scoop up the juice. Blend the remaining peaches (along with all the accumulated juice) in a blender until pureed, and set aside.
  • Prepare the Base: In a large bowl, whisk together the remaining 1/2 cup of sugar, the heavy cream, milk, vanilla extract, and peach extract (if using).
  • Combine: Stir the peach puree into the cream mixture until well combined.
  • Churn: Churn the ice cream base according to your ice cream maker’s directions. In the last 5 minutes of churning, add the reserved 1/2 cup of chopped peaches.
  • Freeze: At this stage, you will have a soft serve consistency. If you prefer firmer ice cream, transfer the churned peach ice cream into a freezer-friendly container, press a piece of plastic wrap directly against the surface of the ice cream, and freeze for at least 4 hours (or overnight) before serving.

Notes

  • Fresh Peaches: When fresh, local peaches are in season, you can definitely swap those in! You will need to blanch, peel, pit, and chop them first. Ensure they are perfectly ripe and sweet.
  • No-Churn Option: If you don’t have an ice cream maker, you can still make this! Toss the thawed peaches with the sugar and let them rest, then blend them together with the rest of the ingredients and freeze. Alternatively, blend the frozen peaches with the remaining ingredients in a high-power food processor for instant soft serve.
  • Fun Variations: Try using grilled peaches for a hint of smokiness, add a dash of lavender extract, or fold in crushed vanilla wafers or graham crackers before freezing!
  • Storage: Keep in the freezer in an airtight container (with plastic wrap pressed over the top) for up to 2 weeks.
