Ingredients

  • 1.5 cups Poha (thick or medium-thick variety of flattened rice)

  • 1/2 tsp turmeric powder

  • 1 tsp sugar (or add more if you prefer a sweeter taste)

  • Salt as required

  • 1.5 to 2 tbsp peanuts

  • 2 to 2.5 tbsp oil

  • 1 medium to large potato (peeled and cut into 1/2 inch cubes)

  • 1 tsp mustard seeds

  • 1 tsp cumin seeds

  • 1/2 cup finely chopped onions

  • 1 green chili, finely chopped

  • 8 to 10 fresh curry leaves

  • 1 to 2 tbsp fresh coriander leaves (cilantro), chopped

  • 1 tsp lemon juice (or 1 lemon cut in wedges)

  • Optional: 2 to 3 tbsp fresh grated coconut

Directions

  • Rinse the Poha: Place the flattened rice flakes in a strainer and pick out any stones or debris. Rinse them under clean running water two or three times. Be careful not to rinse them too much or they will break and become mushy. The flakes should soften but remain intact and separate.
  • Season the Flakes: If the flakes feel a bit dry, sprinkle a few drops of water over them. Sprinkle the turmeric powder, sugar, and salt directly onto the wet poha in the strainer. Gently toss with clean fingers to mix evenly, then set aside.
  • Roast the Peanuts: Heat a frying pan over medium-low heat. Add the peanuts and dry roast them until they become crunchy. Remove and set aside.
  • Fry the Potatoes: Heat the oil in a pan or kadai. Add the potato cubes and sauté them, stirring often, until they are tender, golden, and crispy. Remove with a slotted spoon and set aside.
  • The Tempering: In the same pan with the hot oil, add the mustard seeds and let them splutter. Add the cumin seeds and let them change color and crackle.
  • Sauté the Aromatics: Add the finely chopped onions and sauté until translucent and softened. Next, add the curry leaves and chopped green chili, sautéing for about half a minute.
  • Combine: Add the roasted peanuts and the crispy potato cubes back into the pan. Stir well. Gently add the prepared, seasoned poha.
  • Steam and Serve: Mix everything gently so the yellow color distributes evenly. Cover the pan and cook on low heat for 1 to 2 minutes. Turn off the heat, add the lemon juice, and garnish with fresh coriander leaves and grated coconut. Serve warm!

Notes

  • Choosing the Right Poha: Always use the thick or medium-thick variety of flattened rice for this recipe. Thin poha will disintegrate into mush when rinsed.
  • Spice Adjustments: For a spicier kick, simply increase the number of chopped green chilies. The sugar is optional but highly recommended to balance the tangy lemon.
  • Quick Potatoes: If you want to speed up the cooking process even further, you can use boiled or steamed potato cubes instead of pan-frying them from raw.
