Ingredients

  • For the Base:

  • 1 cup pecans or walnuts

  • 1 cup pitted Medjool dates

  • 2 tbsp raw cacao powder

  • 1 pinch sea salt

  • For the Vanilla Cream Layer:

  • 2 cups raw cashews (soaked in water overnight, then drained)

  • ½ cup pure maple syrup

  • ⅓ cup melted coconut oil

  • ¼ cup unsweetened almond milk

  • 1 tsp pure vanilla extract

  • For the Coffee Layer:

  • ⅓ cup strong brewed espresso (cooled)

  • 1 tbsp pure maple syrup

  • 1 tbsp melted coconut oil

  • For the Topping:

  • 2 tbsp raw cacao powder (for dusting)

Directions

  • Line an 8×8-inch baking dish with parchment paper, leaving enough overhang on the sides to easily lift the dessert out later.
  • In a food processor, blend the pecans, Medjool dates, 2 tablespoons of cacao powder, and sea salt until a sticky dough forms. Press this mixture firmly and evenly into the bottom of the prepared dish.
  • In a high-speed blender, combine the soaked cashews, ½ cup maple syrup, ⅓ cup melted coconut oil, almond milk, and vanilla extract. Blend on high until completely smooth and silky.
  • Pour two-thirds of this vanilla cream mixture over the date and pecan base. Use a spatula to smooth the top, then place the dish in the freezer for 20 minutes to let the layer firm up slightly.
  • Add the cooled espresso, 1 tablespoon of maple syrup, and 1 tablespoon of melted coconut oil to the remaining one-third of the vanilla cream still in the blender. Blend until well combined.
  • Pour the coffee cream layer over the chilled vanilla cream layer, spreading it evenly.
  • Freeze the entire dessert for at least 4 hours, or until completely firm.
  • Remove from the freezer, lift the Rawmisu out using the parchment paper, and dust generously with raw cacao powder. Let it sit at room temperature for 10–15 minutes to soften slightly before slicing into squares and serving.

Notes

  • If you forget to soak your cashews overnight, you can quick-soak them by pouring boiling water over them and letting them sit for 1 hour before draining.
  • For a caffeine-free version, swap the espresso for a strong brewed chicory or dandelion root coffee substitute.
  • Keep leftovers stored in an airtight container in the freezer for up to 1 month. Always let them thaw for a few minutes before eating to enjoy the best texture.
