Ingredients

  • 2 cups all-purpose flour

  • ¾ cup granulated sugar

  • 2 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 cup sour cream (or plain Greek yogurt)

  • ½ cup unsalted butter, melted and cooled slightly

  • 2 large eggs, room temperature

  • 1 tsp pure vanilla extract

  • 1 ½ cups fresh rhubarb, chopped into small ¼-inch pieces

  • For the Streusel Topping:

  • ⅓ cup all-purpose flour

  • ⅓ cup brown sugar, packed

  • 1 tsp ground cinnamon

  • 3 tbsp unsalted butter, melted

Directions

  • Preheat your oven to 425°F (220°C). Line a 12-cup muffin tin with paper liners or spray generously with non-stick cooking spray.
  • In a small bowl, prepare the streusel topping by mixing the ⅓ cup flour, brown sugar, and cinnamon. Pour in the 3 tablespoons of melted butter and stir with a fork until the mixture resembles coarse crumbs. Set aside.
  • In a large mixing bowl, whisk together the 2 cups of all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
  • In a separate medium bowl, whisk together the sour cream, melted butter, eggs, and vanilla extract until smooth and well combined.
  • Pour the wet ingredients into the dry ingredients and gently fold them together using a rubber spatula. Stop mixing when there are still a few flour streaks visible—do not overmix.
  • Gently fold in the chopped rhubarb until just combined.
  • Divide the batter evenly among the 12 muffin cups, filling them almost all the way to the top. Sprinkle a generous amount of the prepared streusel topping over each muffin, pressing it down slightly so it sticks.
  • Bake at 425°F (220°C) for 5 minutes. Then, keeping the muffins in the oven, reduce the temperature to 350°F (175°C) and continue baking for another 15–17 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Frozen rhubarb: You can use frozen rhubarb if fresh is out of season. Do not thaw it first; just toss the frozen pieces in a tablespoon of flour before adding them to the batter to prevent excess moisture from making the muffins soggy.
  • Mix-ins: Feel free to add ½ cup of chopped walnuts, pecans, or even strawberries to the batter for extra flavor and texture.
  • Storage: Store cooled muffins in an airtight container at room temperature for up to 3 days, or freeze them in a freezer-safe bag for up to 3 months.
