Ingredients

  • 1/2 tsp high-quality saffron threads

  • 2 tbsp hot water (for blooming the saffron)

  • 4 bone-in, skin-on chicken thighs

  • 1 tbsp olive oil

  • 1 medium yellow onion, thinly sliced

  • 3 cloves garlic, finely minced

  • 1 cup low-sodium chicken broth

  • 1 large lemon (half cut into thin slices, half juiced)

  • 1/2 cup fresh parsley, roughly chopped (divided)

  • 1/2 tsp kosher salt, plus more for seasoning

  • 1/4 tsp freshly ground black pepper

Directions

  • Place the saffron threads in a small bowl and gently crush them with your fingers. Pour the 2 tablespoons of hot water over the threads and let them steep (bloom) for at least 10 minutes while you prep the other ingredients.
  • Pat the chicken thighs completely dry with paper towels. Season both sides generously with kosher salt and freshly ground black pepper.
  • Heat the olive oil in a large, heavy-bottomed skillet over medium-high heat. Place the chicken thighs in the skillet, skin-side down, and sear for 5–7 minutes until the skin is deeply golden and crispy. Flip the chicken and cook for another 3 minutes, then transfer the thighs to a plate.
  • In the same skillet (leaving the rendered chicken fat), add the thinly sliced onion. Sauté for about 5 minutes until soft and translucent. Add the minced garlic and cook for 1 minute until fragrant.
  • Pour in the chicken broth, gently scraping up any browned bits from the bottom of the pan with a wooden spoon.
  • Stir in the bloomed saffron water (including the threads), the fresh lemon juice, and half of the chopped parsley.
  • Return the chicken thighs to the skillet, skin-side up. Nestle the thin lemon slices into the sauce around the chicken.
  • Bring the liquid to a gentle simmer, then reduce the heat to medium-low. Cover the skillet and let the chicken cook for 20–25 minutes, or until the chicken is tender and reaches an internal temperature of 165°F.
  • Remove the skillet from the heat, garnish with the remaining fresh parsley, and serve immediately.

Notes

  • The Saffron Secret: Never skip the blooming step! Steeping the crushed saffron threads in hot water is absolutely essential for extracting their maximum color and flavor. Throwing dry threads directly into the pan will result in a much weaker dish.
  • Make It Boneless: If you prefer using boneless, skinless chicken breasts or thighs, reduce the simmering time to 12–15 minutes to prevent the meat from drying out.
  • Serving Suggestions: This chicken creates a beautifully fragrant, slightly brothy sauce. Serve it over fluffy basmati rice, quinoa, or roasted potatoes to ensure none of the saffron liquid goes to waste.
