  • ½ cup vegetable oil or melted butter

  • ¾ cup granulated sugar

  • 1½ tsp baking powder

  • ½ tsp baking soda

  • 1 tsp vanilla extract

Directions

  • Preheat oven to 350°F (175°C). Grease and flour an 8-inch round or square cake pan.
  • Add strawberries, eggs, oil, sugar, and vanilla to a blender. Blend until smooth.
  • In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  • Pour the strawberry mixture into the dry ingredients and mix just until combined — don’t overmix.
  • Pour the batter into the prepared pan and smooth the top.
