  • 1 pound fresh jalapeno peppers, thinly sliced into rings

  • 2 cups granulated sugar

  • 2/3 cup apple cider vinegar

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon turmeric

  • 1/2 teaspoon celery seed

  • 1/4 teaspoon cayenne pepper

  • 1/4 teaspoon ground mustard

  • 1/4 teaspoon kosher salt

Directions

  • Prepare the Jalapenos: Wash and dry the jalapenos thoroughly. Wearing gloves, slice the jalapenos into thin, even rings, discarding the stems but keeping the seeds intact for full heat. Note: Avoid paper-thin slices, which can turn limp and lose structure once cooked.
  • Build the Syrup Base: In a large, heavy-bottomed saucepan, combine the granulated sugar, apple cider vinegar, garlic powder, turmeric, celery seed, cayenne pepper, ground mustard, and kosher salt. Stir well before turning on the heat to fully hydrate the spices and prevent clumping.
  • Simmer the Syrup: Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring occasionally. Let it simmer for 5 minutes to bloom the spices fully. The liquid will turn clear and slightly thickened.
  • Cook the Peppers: Carefully add the sliced jalapenos to the simmering syrup, stirring gently to coat every piece. Reduce the heat slightly and allow the mixture to simmer for 4 minutes. The peppers should darken in color and soften while still holding their shape.
  • Separate: Using a slotted spoon, transfer the softened jalapenos into clean, heat-safe glass jars. Fill them loosely without packing to leave space for the syrup to circulate.
  • Reduce the Syrup: Increase the heat slightly and continue simmering the remaining syrup in the pan for 6 to 8 minutes until it is thickened and glossy. It should coat the back of a spoon and drip slowly.
  • Combine and Cool: Pour the hot syrup over the jalapenos in the jars, fully submerging them. Tap the jars gently on the counter to release any trapped air bubbles. Let cool uncovered at room temperature for 30 minutes.
  • Rest and Store: Seal the jars and refrigerate for at least 12 hours before using. This rest time allows the heat, sweetness, and acidity to fully merge and deepen.

Notes

  • Heat Control: For slightly less heat, remove some seeds during slicing (or swap in banana peppers). For maximum fire, leave all seeds intact and use older, fully ripened jalapeños (or swap in serrano peppers).
  • Syrup Texture: If the syrup thickens too much after chilling in the fridge, warm it gently over low heat to loosen it before serving.
  • Flavor Variations: Swap half the granulated sugar for brown sugar to deepen the caramel notes, add crushed red pepper flakes for layered heat, or add a splash of bourbon to the syrup for smoky depth.
