Origin Taco Soup
The concept of taco soup stems from the rich traditions of Tex-Mex cuisine, taking all the beloved fillings of a classic ground beef taco and transforming them into a comforting, spoonable stew. This modern one-pot wonder honors the history of Southwestern chili and stews by using common pantry staples and robust spice blends to create a deeply flavorful broth without requiring hours of slow simmering.
Why I Love This Recipe
I love how incredibly versatile and budget-friendly this recipe is; you simply brown the meat, open a few cans, and let the stove do the rest. It is also the ultimate crowd-pleaser because everyone can customize their own bowl with their favorite creative taco toppings like shredded cheese, sour cream, diced avocado, and crushed tortilla chips for added crunch.

kcalIngredients
1 lb lean ground beef (or ground turkey)
1 medium yellow onion, chopped
1 (1 oz) packet taco seasoning
1 (1 oz) packet dry ranch dressing mix
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can kidney beans, rinsed and drained
1 (15 oz) can corn kernels, drained
1 (15 oz) can diced tomatoes (do not drain)
1 (4 oz) can diced green chiles (do not drain)
2 cups beef broth (or chicken broth)
Optional toppings: shredded cheddar cheese, sour cream, sliced jalapeños, crushed tortilla chips, fresh cilantro
Directions
- Heat a large Dutch oven or heavy-bottomed soup pot over medium-high heat. Add the ground beef and chopped onion, cooking for 5–7 minutes until the beef is fully browned and the onions are soft. Drain any excess grease from the pot.
- Stir the taco seasoning and the dry ranch dressing mix into the browned beef, cooking for 1 minute until the spices are fragrant.
- Add the black beans, kidney beans, corn, diced tomatoes with their juices, and diced green chiles to the pot. Stir well to combine.
- Pour in the beef broth and bring the soup to a gentle boil.
- Once boiling, reduce the heat to low, cover the pot, and let the soup simmer for 15 minutes to allow the flavors to meld together.
- Ladle the hot soup into bowls and serve immediately with your favorite taco toppings.
Notes
- Slow Cooker Option: You can easily make this in a Crockpot! Simply brown the beef and onions on the stove, drain the grease, and transfer the meat to your slow cooker. Add all the remaining ingredients and cook on LOW for 4-6 hours.
- Spice Adjustments: If you prefer a spicier soup, use “hot” taco seasoning, leave the seeds in your diced jalapeños, or swap the standard diced tomatoes for a can of Rotel (tomatoes with green chilies).
- Storage: This soup tastes even better the next day! Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
