This moist keto pumpkin bread recipe is so sweet and deliciously soft, no one can ever believe the healthy ingredients!

Ingredients

  • 2 cups almond flour (200g)

  • 1/4 cup granulated sweetener (for sugar free, I recommend Lakanto)

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 1 tsp cinnamon or pumpkin pie spice

  • 1 cup pumpkin puree

  • 3 eggs (or flax eggs)

  • optional handful mini chocolate chips

Directions

  • Grease a 9×5 loaf pan or line with parchment. Preheat the oven to 325 F. 
  • Stir all ingredients until completely smooth, then pour into the loaf pan. Bake on the oven’s center rack for one hour. I found that letting the keto pumpkin bread cool completely before going around the sides with a knife and popping out the loaf will ensure it doesn’t break, as the recipe is super moist and fudgy! The pumpkin bread can be loosely covered and left out overnight, or refrigerate leftovers for up to five days, or slice and freeze for a month or two.

Notes

  • While canned pumpkin puree is convenient, using fresh homemade pumpkin puree can add a richer flavor. Just roast a small pumpkin, scoop out the flesh, and blend until smooth. Be sure to drain any excess liquid if it’s too watery.

  • Begin by making the Simple tomato sauce, heat the olive oil in a saucepan, add the garlic clove and cook until just softened. Add the chopped tomatoes and season. Cook slowly for 25 mins, stirring now and then, until very thick. Do this a day or two ahead of assembling the rotolo, or freeze it for up to 2 months.
  • Wilt the spinach in a pan over a medium heat, then leave to cool. Squeeze well to remove the excess water, then roughly chop the spinach. Season and leave to cool completely.
  • Gently fry the garlic in the butter until softened, then remove from the heat and add the marjoram. Tip into a bowl and add the spinach, ricotta and Parmesan.
  • Roll out the pasta (see step-by-step images). Cut the sheets into 3 or 4 pieces, each roughly 40cm long, and place them on a white tea towel. Using a little water and a pastry brush, stick the sheets together, allowing a 1cm overlap.
  • Using a spatula, spread the filling over the pasta as evenly as possible, leaving a 1cm border around the edge.
  • Fold over the edge of the pasta nearest to you and, using the tea towel and the weight of the pasta, roll it away from you like you would a Swiss roll.
  • Brush the open edge of the pasta with a little water and press together to seal.
  • Wrap the pasta roll tightly in the tea towel and tie a piece of string round it every 10cm or so (or use a butcher’s knot – see step-by-step images). Tie the ends with string to secure them, leaving a long piece of string at each end to act as a handle.
  • Bring a large pan of salted water to the boil (a fish kettle is ideal, but a deep roasting tin filled with water works well too) and cook the rotolo for 20 mins. Remove from the water and leave to cool. Heat oven to 190C/170C fan/gas 5.
  • Gently unwrap the rotolo and cut it into 3cm slices. Arrange the slices in a baking dish. Spoon over the Simple tomato sauce, sprinkle with Parmesan and drizzle with a little olive oil. Bake for 15 mins until the pasta is hot and crisping around the edges.

Notes

  • The ideal flour for pasta is ‘00’ flour, also known as Italian tipo 00 or doppio zero flour. It’s very finely milled and will give your pasta good texture and bite.
  • Use good-quality eggs too. Many supermarkets sell ‘golden yolk’ varieties, which will give your pasta a richer flavour and colour.

  • Soak porcini in 300ml/1⁄2 pt hot water for 30 mins. Skin chicken and rub the cut side of the lemon over them. Heat oil in a pan large enough to hold chicken in one layer. Add chicken and brown on both sides. Transfer to a casserole.
  • Heat oven to 180C/fan 160C/gas 4. Melt the butter in a medium pan. When it stops foaming, add onion and 1 tsp salt, then sauté until pale gold.
  • Meanwhile, remove the porcini from the water and rinse well. Pat dry and chop small. Strain the water through a sieve, stopping before the last spoonful.
  • Add porcini and pumpkin pieces to onion and sauté for 5 mins. Add fresh mushrooms and cook for 5 mins more, stirring frequently. Stir in the cream, 4-5 tbsp of the porcini water and seasoning if you wish. Simmer uncovered for 10-12 mins until reduced slightly, then pour over the chicken.
  • Cover and cook in the oven for 30-40 mins, turning the chicken once or twice and adding a few spoonfuls of water if the sauce becomes a little dry.

  • 1 loaf sourdough bread, about 1 pound

  • 8 to 12 miniature pumpkins

  • 2 teaspoons olive oil

  • 1 1/2 teaspoons Diamond kosher salt, more as needed for seasoning the pumpkins

  • 1/2 teaspoon freshly ground black pepper, more as needed for seasoning the pumpkins

  • 3 ounces (6 tablespoons) unsalted butter

  • 1 1/2 cups diced onion

  • 1 cup diced celery

  • 2 medium tart apples, such as Granny Smith, peeled and diced

  • 3 cloves garlic, minced

  • 1/4 cup coarsely chopped fresh sage

  • 2 tablespoons coarsely chopped fresh thyme leaves

  • 1 tablespoon finely chopped fresh rosemary

  • 1 cup heavy cream

  • 1 1/2 cups vegetable broth, more as needed

  • 3 large eggs, beaten

  • 8 ounces Gruyère cheese, grated

  • 1 cup dried cranberries, optional

Directions

  • Gather the ingredients. Position a rack in the center of the oven and heat to 250 F.
  • Cut or tear the bread into small pieces, then spread them out on a large rimmed baking sheet.
  • Bake the bread until dry, 25 to 30 minutes. Transfer the bread pieces to a large bowl and set aside.
  • Increase the oven temperature to 400 F. Wipe out the baking sheet and line it with foil.
  • Slice about 1/3 off the tops off of the pumpkins; scoop out the seeds and loose fibers.
  • Brush the inside of the pumpkins and lids lightly with olive oil and sprinkle generously with salt and pepper.
  • Place the lids back on the pumpkins, arrange them on the baking sheet, and bake until slightly tender, 20 to 25 minutes. Transfer the pan to a rack and set it aside.
  • Melt the butter in a large skillet over medium heat.
  • When the butter is sizzling, add the onions, celery, and apples to the skillet and sauté until the onions are translucent and the apple is just tender, 6 to 8 minutes.
  • Add the garlic, sage, thyme, and rosemary and continue to cook for 2 minutes.
  • Transfer the vegetable mixture from the skillet to the bowl of dried bread.

Notes

  • If you have extra stuffing, transfer it to a small buttered baking dish and bake it alongside the stuffed pumpkins.
  • Look for mini pumpkins in stores from mid-September into November. Stored properly, a fresh mini pumpkin will last for up to 6 months.
  • Store whole mini pumpkins in a cool (50 F to 60 F) dark place.

  • CUPCAKES

  • 1 1/4 c. (150 g.) all-purpose flour

  • 1 c. (200 g.) granulated sugar

  • 1/2 c. (40 g.) unsweetened cocoa powder

  • 1 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/2 tsp. kosher salt

  • 1/2 c. (120 ml.) buttermilk or whole milk

  • 1/4 c. neutral oil

  • large egg, beaten

  • 1/2 tsp. pure vanilla extract

  • 1/4 c. boiling water

  • FROSTING & ASSEMBLY
  • 4 c. (455 g.) powdered sugar, sifted

  • 1 1/2 c. (3 sticks) unsalted butter, room temperature

  • 1 tsp. pure vanilla extract

  • 1/4 tsp. kosher salt

  • 2 to 3 drops (or more) neon green liquid food coloring

  • Red decorating gel, for drizzling

Directions

  • CUPCAKES
  • Preheat oven to 350°. Line a standard 12-cup muffin tin with liners.
  • In a large bowl, whisk flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Add buttermilk, oil, egg, and vanilla and whisk until smooth. Pour in boiling water and whisk until fully combined.
  • Fill each liner with 1/4 cup (60 ml.) batter, coming about two-thirds up the sides.
  • Bake cupcakes until risen and a tester inserted into the center comes out clean, 18 to 20 minutes. Let cool completely, about 1 hour.
  • FROSTING & ASSEMBLY
  • In the large bowl of a stand mixer fitted with the whisk attachment (or in a large bowl using an electric mixer), beat powdered sugar, butter, vanilla, and salt on medium-high speed until frosting is bright white and very smooth, 2 to 3 minutes. Tint frosting with green food coloring and beat until well incorporated, adding more as needed. Transfer to a large piping bag fitted with a small round tip. 
  • Pipe a small mound (about the size of a quarter) on top of cupcakes. Pipe 2 straight vertical lines, side by side, down middle of cupcakes. Pipe squiggly lines on either side of cupcakes, resembling a brain.
  • Drizzle a small amount of red gel onto each cupcake, letting it settle in creases of brain. Refrigerate cupcakes if not serving right away. 

Notes

  • If you wanted to get really anatomical with these cupcakes, you could add a drop of pink food coloring instead of green to really make it look like a brain instead.

Dinner on Halloween can be anything but regular—it’s gotta be spooky! Our classics have been Jack-‘o-Lantern Stuffed Peppers and Ghost Pizza Bagels, but now we’re obsessed with turning ordinary meatballs into scary works of art by making them look like monster eyeballs. All you need is some mozzarella (fresh works best since it’s thicker) and black olives. 

Ingredients

  • 1 lb. ground beef

  • 1/2 medium onion, finely chopped

  • 1/4 c. Panko bread crumbs

  • 2 cloves garlic, minced

  • 2 tbsp. chopped fresh parsley

  • 1 large egg, beaten

  • Freshly ground black pepper

  • Kosher Salt

  • 1 lb. spaghetti

  • 1 1/2 c. marinara, warmed
    Ciliegine, cut into rounds
    Black olives, sliced crosswise into rounds

Directions

  • Preheat oven to 400° and line a large, rimmed baking sheet with parchment. 
  • In a large bowl, add beef, onion, Panko, garlic, parsley, and egg. Season generously with salt and pepper. Mix ingredients together with a rubber spatula or your hands until well combined, then shape into 1” balls. Place onto baking sheet.
  • Bake until meatballs for 13 minutes, then to each meatball, add a piece of cheese and olive to create “eyeballs.” Bake until cheese is melty, 2 minutes more.
  • Meanwhile, in a large pot of salted, boiling water, cook spaghetti according to package directions until al dente. Drain and transfer to platter.
  • Pour warm marinara sauce over spaghetti, then scatter with meatballs.

Notes

  • Use fresh mozzarella or mozzarella pearls to create the eyeballs. You’ll need one for each “eyeball.”
  • Slice the black olives into thin rounds. One olive round will be placed in the center of each mozzarella ball to create the pupil.

This ground beef and cabbage recipe was my mother’s. She was a country cook, plain and simple. But as I have traveled and worked and experienced foods from around the world, I look back and realize that many of the dishes she prepared, while simple, were perfect for that moment. Sometimes we have to put emotion and love in a dish to make it extra-special. Serve with corn on the cob and cornbread.

Ingredients

  • 1 large head cabbage, finely chopped

  • 1 (14.5 ounce) can diced tomatoes with juice

  • 1 onion, halved and thinly sliced

  • 1 tablespoon Italian seasoning

  • salt and ground black pepper to taste

  • 1 pound lean ground beef

Directions

  • Place cabbage, tomatoes with juice, onion, Italian seasoning, salt, and pepper into a Dutch oven or large pot over low heat; cook and stir until it begins to simmer.
  • Add lean ground beef on top; cover and cook, stirring occasionally, until cabbage is tender and ground beef is cooked through, about 45 minutes.

Notes

  • Do not cook and drain your meat; most of the taste will leave. I use 90/10 ground beef for this recipe.
