Try this clever way to use up your Christmas leftovers, including the remnants of your cheeseboard. Best enjoyed with a Boxing Day movie

Ingredients

  • 6 tbsp. cranberry sauce

  • 200 g tortilla chips

  • 200 g cooked turkey, shredded

  • 12 pigs in blankets

  • 125 g sage and onion stuffing mix

  • 150 g Camembert

  • 50 g blue cheese (stilton or gorgonzola), crumbled

  • 100 g mature Cheddar, coarsely grated

  • 3 tbsp. crème fraiche 

  • 20 g pecans, roughly chopped

  • 1 tbsp. fresh parsley, finely chopped

Directions

  • Preheat grill to high. 
  • For fruitiness, mix the cranberry sauce with 3 tbsp boiling water until smooth and pourable.
  • Spread the tortilla chips onto a large baking tray or ovenproof dish in an even layer. Top with the turkey, pigs in blankets, stuffing and cheese then grill for 5-8 mins until the cheese is golden and bubbling.   
  • Spoon over the crème fraiche, drizzle with the cranberry sauce and sprinkle with pecans for crunch. Serve with parsley for added freshness.

But while delicious, the cream-laced style is equivalent to culinary sacrilege for many in Utica. The slight creaminess of our Chicken Riggies comes from an abundance of freshly grated Parmesan. Beyond richness, the Parm imparts salty, irresistible umami depth.

Omit the red pepper flakes if you want a bit less heat, but do include the sweet pickled peppers – the vinegary, acidic notes are crucial to this dish.

Ingredients

  • Kosher salt

  • 1  box (16 oz) rigatoni

  • 2 tbsp. extra virgin olive oil

  • 2 boneless, skinless chicken breasts, cut into bite size pieces

  • 1/2 medium onion, chopped

  • 2 large bell peppers, chopped

  • 3/4 hot or sweet pickled peppers, chopped

  • 3 cloves garlic, minced

  • 1/2 tsp. red pepper flakes, optional

  • 1/2 c. dry white wine

  • 2 c. tomato puree or sauce

  • Freshly ground black pepper

  • 1 c. freshly grated parmesan, plus more for garnish

  • Fresh basil, chopped, for garnish

Directions

  • Bring a large pot of water to a boil and add 2 tablespoons of salt. Add pasta and cook until just al dente, between 5-7 minutes. Drain, but reserve about 1 cup of the pasta water. Set aside pasta and reserved pasta water.
  • In a large heavy-bottomed pot over medium heat, add the oil and heat until shimmering. Working in batches, add chicken in 1 layer and cook until browned on all sides, about 4 to 5 minutes. Transfer chicken to a plate.
  • Add onion and cook until translucent, about 5 minutes. Stir in hot (or sweet) peppers and bell peppers, and cook until softened, about 5 minutes more. Add garlic and chili flakes (if using), and cook until just fragrant, about 1 minute.
  • Pour in the white wine, and deglaze the pan by scraping up any browned bits. Allow to cook for 2 to 3 minutes. Add tomato puree, and stir until everything is combined. Bring to a boil, lower heat, and simmer for about 7 minutes.
  • Add the chicken to the pan and allow to cook for an additional 3 to 4 minutes, just until the chicken is cooked through. Stir in the Parmesan and allow it to melt into the sauce. Season to taste with salt and pepper.
  • Add the pasta and ½ cup of pasta water to the pan. Stir until the sauce is cohesive, adding more pasta water as needed to loosen the sauce. Simmer for 1 to 2 minutes, or until the pasta has reached the texture you desire.
  • Serve in bowls, and garnish with more cheese and basil.

The rice is then tossed and toasted with the onions and the fat to heat the grains of rice before the liquid is added.

Wine and stock give the rice most of its flavor, so use a decent white wine (one that you’d happily drink the rest of the bottle). If you have homemade stock, that is ideal, but don’t worry if not. There are loads of good-quality, ready-made stock and stock bases to try. It’s best to keep the stock at a low simmer before adding it, as this helps keep the rice cooking even as the temperature isn’t constantly dropping.

Finishing the risotto properly is really important. Once the rice is cooked (it should still have a little bite but not be chalky), grated parmesan and butter are beaten in, and then the risotto is left to sit for 2 minutes to let all of the ingredients meld together.

How to stir Saffron risotto

The constant stirring we associate with risotto happens for a reason. This stirring means the rice grains rub against each other, which helps release the starch from the grains into the stock for that classic, oozy finish. It’s best to use a wide, deep-frying or sauté pan for this, as it means you can keep the rice moving, and the wide surface gives the liquid a chance to evaporate evenly.

This soothing saffron risotto is delicious on its own, or served with a roast chicken and the roasting juices from the tin. An impressive entertaining idea, if you’ve got friends round for dinner

Ingredients

  • 100g, chilled and diced butter

  • 1 small, finely chopped onion

  • 1.25 litres chicken stock

  • 200g arborio rice

  • 75ml dry white wine

  • ½ tsp (look for good-quality long threads) saffron

  • 75g, finely grated parmesan

  • ground white pepper

  • a handful of snipped chives

Directions

  • Melt 50g of the butter in a heavy-based, deep, lidded frying pan, then gently cook the onion for 10 minutes until softened but not coloured.
  • Bring the stock to the boil in another pan, then turn down the heat to a simmer.
  • Add the rice to the butter and cook, stirring, for 3-4 minutes to coat the rice and toast the grains. Pour in the wine then bubble until it has been completely absorbed before stirring in the saffron. Add the stock a ladleful or two at a time, stirring the rice from the bottom of the pan as you go. When each ladle of stock has been absorbed, add the next ladleful. Continue this for around 15 minutes. The risotto is ready when the grains are soft and have lost any chalkiness, but still have a little bite to them (you might not need all of the stock).
  • Beat in the remaining butter and the parmesan, and season with white pepper. Put on a lid and let the risotto sit for 2 minutes, then serve in warm bowls with a scattering of chives.

Brazilian Fish Stew (Moqueca) with coconut milk, lime and jalapeño – a flavorful seafood stew that the whole family will love.

Ingredients

  • Fish:

  • 1 – 1 1/2 pounds firm white fish- Halibut, Black Cod, Sea Bass ( thicker cuts are best)

  • 1/2 teaspoon salt

  • one lime- zest and juice

  • Stew/ Sauce:
  • 2–3 tablespoons coconut or olive oil (or use Dende – Brazillian Red Palm oil for the best flavor!)

  • 1 onion- finely diced ( red, white or yellow)

  • 1/2 teaspoon salt

  • 1 cup carrot, diced

  • 1 red bell pepper, diced

  • 4 garlic cloves- rough chopped

  • 1 tablespoon tomato paste

  • 2 teaspoons paprika

  • 1 teaspoon ground cumin (or whole seed)

  • 1 cup fish or chicken stock

  • 1 1/2 cups tomatoes, diced ( preferably fresh)

  • 1 14 ounce can coconut milk ( liquid and solids)

  • more salt to taste

  • 1/2 cup chopped cilantro, scallions or Italian parsley

  • squeeze of lime

Directions

  • Rinse and pat dry the fish and cut into 2 inch peices. Place in a bowl. Add salt, zest from half the lime and 1 tablespoon lime juice. Massage lightly to coat all pieces well. Set aside.
  • In a large saute pan, heat the olive oil over medium high heat. Add onion and salt, and sauté 2-3 minutes. Turn heat down to medium, add carrot, bell pepper, garlic and jalapeno and cook 4-5 more minutes. Add tomato paste, spices and stock. Mix and bring to a simmer and add tomatoes. Cover and simmer gently on medium low for 5 mintues or until carrots are tender.
  • Add the coconut milk and taste and add more salt if necessary.
  • Nestle the fish in the stew and simmer gently until it’s cooked through, about 4-6 minutes.  Spoon the flavorful coconut broth over the fish and cook until desired doneness or longer for thicker pieces. ( You can also finish this in a 350F oven).
  • Taste and adjust salt and squeeze with lime.
  • To serve, serve over rice, sprinkle with cilantro or scallions and a squeeze of lime.
  • Drizzle with a little olive oil if you like.

Habanero hot sauce is hands down my favorite sauce ever, and it’s made from habanero peppers. These peppers are super hot, so you usually need something sweet to tone it down a bit, making the sauce more enjoyable for everyone.

At first, the idea of making my own habanero sauce scared me! I didn’t know where to start, especially with such a spicy pepper. The habanero is one of the hottest out there, but once you learn how to “calm down” the heat, it’s actually really simple. All you need is a pan, a blender, and a wooden spoon.

Some people like to roast the peppers first, but I think using fresh habaneros is the way to go. It keeps that amazing flavor intact. The smell of fresh habaneros is incredible, isn’t it?

Once I finish making my hot sauce, I pour it into a glass bottle and store it in the fridge. I usually finish it within two weeks, using it as a dip for just about everything. My favorites are polenta chips, tofu nuggets, and crispy tofu sticks. If you have extra habaneros, you can whip up a tasty salsa with fresh pineapple or mango!

What is a Habanero Pepper?

The habanero pepper is a small, brightly colored chili pepper with a powerful punch. Habaneros have a Scoville heat rating ranging from 100,000 to 350,000 units. Habaneros are significantly hotter than jalapeño peppers, which only have 2,500 to 8,000 units of heat.

Habanero peppers have a fruity, slightly sweet flavor, in addition to their intense heat. This distinct flavor makes them ideal for hot sauces, as they provide not only heat but also a hint of flavor that enhances many dishes.

Habanero hot sauce is best known for its heat, but it also has some health benefits. Capsaicin, the spiciness-causing compound, is found in habanero peppers.   • Place the smooth liquid back to the pan and bring to a gentle boil. Simmer for 5-10 minutes, stirring almost continuously.
  • The sauce is ready when it thickens. Allow to cool slightly, then transfer to a clean jar or glass bottle.
  • Keep refrigerated and consume within 2 weeks.

Notes

  • The red Savina habanero used to be the hottest pepper. This red habanero is nearly twice as hot as the more commonly available orange habanero. However, the habanero is no longer the hottest pepper in the world, falling behind the Carolina Reaper and ghost peppers.
  • This homemade habanero hot sauce keeps for up to two weeks in the refrigerator. You can, however, transfer it to sterilized bottles in a hot water bath and seal them, which will keep it for a very long time.

A comforting vegan one-pot recipe that counts for 3 of your 5-a-day! You can’t go wrong with this iron-rich, low-fat, low-calorie supper

Directions

  • Heat 1 tbsp sesame oil in a wide-based pan with a tight-fitting lid.
  • Add 1 finely chopped red onion and cook over a low heat for 10 mins, stirring occasionally, until softened.
  • Add 1 crushed garlic clove, a finely chopped thumb-sized piece of ginger and 1 finely chopped red chilli, cook for 1 min, then add 1½ tsp ground turmeric and 1½ tsp ground cumin and cook for 1 min more.
  • Turn up the heat to medium, add 2 sweet potatoes, cut into even chunks, and stir everything together so the potato is coated in the spice mixture.
  • Tip in 250g red split lentils, 600ml vegetable stock and some seasoning.
  • Bring the liquid to the boil, then reduce the heat, cover and cook for 20 mins until the lentils are tender and the potato is just holding its shape.
  • Taste and adjust the seasoning, then gently stir in the 80g spinach. Once wilted, top with the 4 diagonally sliced spring onions and ½ small pack torn basil leaves to serve.
  • Alternatively, allow to cool completely, then divide between airtight containers and store in the fridge for a healthy lunchbox.

Notes

  • Whether chilling or freezing, don’t top with the spring onions and basil until you are about to serve. To freeze, allow the dhal to cool, then pop into freezable containers. Defrost in the fridge overnight, then reheat until piping hot.

  • Put the chicken in a big bowl. In a pan, heat 1 litre of water with the salt, brown sugar and chilli flakes. When it’s dissolved, add 2 litres of cold water and pour over the chicken. Put in the fridge and leave for at least 2 hrs, but ideally a day or two. When you’re ready to cook, take the chicken out of the water and pat dry all over with kitchen paper.
  • Heat oven to 180C/160C fan/gas 4. Put the smoked paprika, ground cumin, sea salt and dark brown sugar on a baking tray. Mix them together, then roll the dried chicken pieces in the spices, making sure everything is covered. Roast the chicken for 1 hr or until crispy and caramelised.
  • Meanwhile, for the sauce, gently melt the butter in a small pan with the hot sauce and maple syrup. When the chicken pieces come out of the oven, drizzle this sauce all over them and give them a shake. Serve with a side of creamed corn.

Notes

  • Wings vs. Tenders: Traditional Buffalo chicken uses wings, but you can also use boneless tenders if you prefer. Tenders are easier to eat and slightly less messy but may take a bit longer to cook.
  • Hot Sauce Choice: Frank’s RedHot is the classic sauce used for Buffalo wings, but you can experiment with other hot sauces to adjust the heat level. For milder wings, use a less spicy sauce or mix in more butter.

  • Tip the tomatoes into a colander set over a large bowl, sprinkle over 1 tsp salt and set aside for 1 hr to draw out the moisture. Meanwhile, make the pastry. Tip the flour, butter and a good pinch of salt into a food processor and blitz to a fine breadcrumb-like consistency.
  • Beat the eggs in a jug, then tip into the processor and pulse to a soft dough – if it seems dry, add ½ tsp cold water at a time until it comes together. Shape into a disc, then wrap and chill for 20 mins.
  • Heat the oven to 180C/160C fan/gas 4. Tip the tomatoes into a large bowl with the cheese, garlic, herbs and a good grinding of black pepper. Gently combine using your hands and set aside.
  • Roll the chilled pastry out on a lightly floured surface to a roughly 30cm circle. Pile the tomato mixture into the middle, leaving a roughly 5cm border around the edge. Brush the exposed pastry border with some beaten egg, then fold the border up so it slightly overlaps the tomato filling. It doesn’t need to be even or neat.
  • Brush the pastry with more beaten egg, then bake for 40-50 mins until the pastry is golden and the tomatoes have softened and are tender.
