Ingredients

  • 1 block (14 oz) extra-firm tofu, pressed and cut into 1-inch cubes

  • 1 tbsp cornstarch

  • 2 tbsp toasted sesame oil or neutral cooking oil (divided)

  • 1 medium broccoli crown, cut into small florets

  • 1 red bell pepper, thinly sliced

  • 1 cup snow peas or snap peas, ends trimmed

  • 3 cloves garlic, finely minced

  • 1 tbsp fresh ginger, grated

  • 1/4 cup low-sodium soy sauce or tamari

  • 1 tbsp rice vinegar

  • 1 tbsp pure maple syrup or brown sugar

  • 1/2 tsp red pepper flakes (optional, for heat)

Directions

  • In a small bowl, whisk together the low-sodium soy sauce, rice vinegar, maple syrup, grated ginger, minced garlic, and red pepper flakes. Set the sauce aside.
  • Pat the cubed tofu completely dry with clean paper towels, then place it in a medium bowl. Sprinkle the cornstarch over the tofu and gently toss until the cubes are evenly coated.
  • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the coated tofu in a single layer and cook for 5–7 minutes, turning occasionally, until the cubes are golden brown and crispy on all sides. Remove the crispy tofu and set it aside on a plate.
  • Add the remaining 1 tablespoon of oil to the hot skillet. Toss in the broccoli florets, sliced red bell pepper, and snow peas. Stir-fry for 4–5 minutes until the vegetables are vibrant and crisp-tender.
  • Return the crispy tofu to the skillet with the cooked vegetables.
  • Pour the prepared soy-ginger sauce over everything in the pan. Toss continuously for 1–2 minutes until the sauce bubbles, thickens slightly, and beautifully coats the tofu and vegetables.
  • Remove the skillet from the heat and serve immediately over warm steamed rice or noodles.

  • The Secret to Crispy Tofu: For the absolute best texture, do not skip pressing your extra-firm tofu! Wrap the block in a clean kitchen towel and place a heavy pan on top for at least 15 minutes before cubing it to remove excess water.
