  • 1 medium yellow onion, finely diced

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 2 tbsp red or yellow curry paste

  • 1 large red bell pepper, chopped

  • 2 cups broccoli florets

  • 1 medium zucchini, sliced into half-moons

  • 1 (14 oz) can unsweetened full-fat coconut milk

  • 2 cups low-sodium vegetable broth

  • 1 tbsp soy sauce or tamari

  • 1 tbsp fresh lime juice

  • Fresh cilantro and sliced green onions for garnish

Directions

  • Heat the coconut oil in a large pot or Dutch oven over medium heat. Add the onion and sauté for 5 minutes until translucent.
  • Stir in the garlic, ginger, and curry paste. Cook for 1–2 minutes, stirring constantly until the paste becomes incredibly fragrant.
  • Add the bell pepper, broccoli, and zucchini. Toss to coat them in the fragrant curry mixture.
