This beautiful and nostalgic Neapolitan ice cream brings three classic flavors together in one perfect, cohesive slice. Whether you are throwing a summer birthday party or simply searching for homemade ice cream recipes that impress guests without too much effort, this tri-color treat is guaranteed to be a massive hit. You no longer have to choose between strawberry, vanilla, or chocolate when you can enjoy all three side-by-side in a rich, creamy, no-churn format.
Origin Neapolitan ice cream
The origin of this three-layered dessert dates back to the late 19th century, brought to the United States by immigrants from Naples, Italy. These Italian artisans were famous for their spumoni, a layered gelato traditionally featuring cherry, pistachio, and chocolate. Over time, adapting to American preferences for vanilla, chocolate, and strawberry led to the beloved combination that has become a celebrated piece of ice cream history across North America.
Why I Love This Recipe
I love how visually stunning this recipe is when sliced, yet how deceptively simple it is to prepare using a standard loaf pan. By making a single, rich no-churn base and dividing it into three portions to flavor independently, you save an incredible amount of time in the kitchen. It is one of my favorite easy summer desserts because it looks like a total showstopper but requires zero fancy equipment or expensive ice cream makers.
Tips for the Perfect Slice
To achieve those beautiful, clean lines between the chocolate, vanilla, and strawberry layers, patience during the freezing process is absolutely vital. You must let each layer freeze until it is semi-firm before gently spreading the next flavor on top. Furthermore, dipping your knife in hot water and wiping it dry before cutting is a brilliant dessert slicing technique that ensures your beautiful layers do not smear into one another when you serve it.

Neapolitan ice cream
Course: DessertCuisine: American-ItalianDifficulty: Easy10

kcalIngredients
2 cups (1 pint) heavy whipping cream, cold
1 can (14 oz) full-fat sweetened condensed milk, chilled
1 tsp pure vanilla extract
1 pinch of fine sea salt
For the Chocolate Layer:
3 tbsp unsweetened cocoa powder
1 tbsp milk
For the Strawberry Layer:
½ cup freeze-dried strawberries, blended into a fine powder (or ¼ cup strawberry jam)
1 drop of natural pink food coloring (optional)
Directions
- Line a 9×5-inch metal loaf pan with parchment paper or plastic wrap, leaving plenty of overhang on the sides for easy removal later. Place the pan in the freezer to chill.
- In a large mixing bowl, use an electric hand mixer or stand mixer to beat the cold heavy whipping cream until stiff peaks form (about 3–4 minutes).
- Gently fold the sweetened condensed milk, vanilla extract, and salt into the whipped cream using a rubber spatula. Be careful not to deflate the whipped cream.
- Divide the ice cream base evenly into three separate bowls.
- Vanilla Layer: Leave the first bowl exactly as it is.
- Chocolate Layer: In a small cup, whisk the cocoa powder and 1 tablespoon of milk together to form a paste. Gently fold this chocolate paste into the second bowl of the base until fully combined.
- Strawberry Layer: Fold the freeze-dried strawberry powder (or jam) and the pink food coloring into the third bowl until smooth.
- Remove your chilled loaf pan from the freezer. Spread the chocolate layer evenly across the bottom. Place the pan back in the freezer for 20–30 minutes until the top is semi-firm.
- Remove the pan and gently spread the vanilla layer over the chocolate. Freeze for another 20–30 minutes.
- Finally, spread the strawberry layer over the vanilla. Cover the top tightly with plastic wrap and freeze for at least 6 to 8 hours, or ideally overnight, until completely solid.
- To serve, use the parchment overhang to lift the ice cream block out of the pan. Slice with a hot, dry knife to reveal the perfect layers.
Notes
- Freeze-Dried Strawberries: Using freeze-dried strawberries blended into a powder provides an intense, authentic strawberry flavor without adding excess liquid, which can cause the ice cream to become icy instead of creamy.
- Flavor Order: You can layer the ice cream in any order you like, but starting with the heaviest flavor (chocolate) on the bottom usually provides the best structural support.
- Storage: Keep leftovers tightly wrapped in plastic wrap or stored in an airtight container in the freezer for up to 3 weeks.
