Ingredients

  • 2 large boneless, skinless chicken breasts

  • 3 tbsp olive oil

  • Juice and zest of 1 lemon

  • 3 garlic cloves, minced

  • 1 tsp dried oregano

  • ½ tsp dried thyme

  • ½ tsp paprika (optional)

  • Salt and black pepper, to taste

  • 1 tbsp chopped fresh parsley or basil (for garnish)

  • Optional: cherry tomatoes, olives, or feta crumbles for serving

Directions

  • Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  • In a small bowl, whisk together olive oil, lemon juice and zest, garlic, oregano, thyme, paprika, salt, and pepper.
  • Place chicken breasts in the baking dish. Pour marinade over the chicken, turning to coat evenly.
  • Let marinate for 10–15 minutes at room temperature (or up to 2 hours in the fridge for deeper flavor).
  • Bake for 22–25 minutes, or until internal temperature reaches 165°F (74°C).
  • Rest for 5 minutes before slicing. Garnish with fresh herbs and any optional toppings.
