Ingredients

  • 1 orange or yellow bell pepper, finely diced

  • 2 Persian cucumbers (or half an English cucumber)

  • 1/2 small red onion (heaping half cup)

  • 1/3 cup fresh parsley, finely chopped

  • 1/2 cup kalamata olives (or pepperoncini)

  • 1/2 cup feta cheese, crumbled

  • For the Dressing:

  • 1/4 cup red wine vinegar

  • 1 1/2 tsp honey or pure maple syrup

  • 1 1/2 tsp dried oregano

  • 3 cloves garlic, minced

  • 3/4 tsp fine salt

  • 1/4 tsp freshly ground black pepper

  • 1/4 cup extra virgin olive oil

Directions

  • Make the Dressing: In a small jar or bowl, whisk together the red wine vinegar, honey (or maple syrup), dried oregano, minced garlic, fine salt, and black pepper. Slowly whisk in the extra virgin olive oil until the dressing is completely emulsified and combined.
  • Combine the Salad: In a large mixing bowl, add the rinsed chickpeas, cannellini beans, diced bell peppers, cucumbers, red onion, fresh parsley, olives, and crumbled feta cheese.
