  • 2 cups dried chickpeas (Do NOT use canned or cooked chickpeas)

  • 1/2 tsp baking soda

  • 1 cup fresh parsley leaves, stems removed

  • 3/4 cup fresh cilantro leaves, stems removed

  • 1/2 cup fresh dill, stems removed

  • 1 small onion, quartered

  • 7–8 garlic cloves, peeled

  • Salt, to taste

  • 1 tbsp ground black pepper

  • 1 tbsp ground cumin

  • 1 tbsp ground coriander

  • 1 tsp cayenne pepper (optional)

  • 1 tsp baking powder

  • 2 tbsp toasted sesame seeds

  • Neutral oil for frying

  • Optional Sandwich Fixings & Sauces:

  • Tahini sauce or classic hummus

  • English cucumbers, chopped or diced

Directions

  • Soak the Chickpeas: One day in advance, place the dried chickpeas and baking soda in a large bowl. Fill the bowl with enough water to cover the chickpeas by at least 2 inches. Soak overnight for 18 to 24 hours until they expand to double their size. When ready, drain the chickpeas completely and pat them thoroughly dry with a towel.
  • Process the Mixture: Add the soaked chickpeas, fresh parsley, cilantro, dill, quartered onion, peeled garlic, and spices (black pepper, cumin, coriander, and optional cayenne) into a large food processor fitted with a blade.   • Chill the Dough: Transfer the falafel mixture into a container and cover it tightly. Refrigerate for at least 1 hour, or up to one full night, until completely chilled.
  • Form the Patties: Just before cooking, add the baking powder and toasted sesame seeds directly to the chilled mixture and stir thoroughly with a spoon. Scoop out tablespoonfuls of the mixture and shape them into round balls or 1/2-inch thick patties. Tip: Wetting your hands slightly will prevent the mixture from sticking to your palms.
  • Fry to Golden Perfection: Fill a medium saucepan 3 inches deep with frying oil. Heat the oil on medium-high until it reaches a steady 375°F (190°C) and bubbles softly. Carefully drop the patties into the oil using a slotted spoon. Fry in small batches for 3 to 5 minutes until the outside turns a deep golden brown and crunchy. Avoid overcrowding the pan.
  • Drain and Serve: Remove the cooked falafel with your slotted spoon and transfer them to a colander or a plate lined with paper towels to drain excess oil. Serve immediately while piping hot!

  • Make-Ahead & Freezing: The raw, un-fried falafel mixture will keep perfectly in an airtight container in the refrigerator for 1 to 2 days ahead of time. To freeze, arrange the formed uncooked patties on a parchment-lined baking sheet and freeze for 1 hour. Once frozen solid, transfer them into a heavy-duty freezer bag for up to 1 month. You can fry or bake them directly from their frozen state.
