Ingredients

  • 4 cups brewed green tea, cooled

  • 1 cup rhubarb syrup (see instructions below)

  • ¼ cup honey (adjust to taste)

  • ½ cup fresh orange juice

  • ¼ cup fresh lemon juice

  • 2 cups sparkling water

  • Ice cubes

  • Orange and lemon slices, for garnish

  • Fresh mint leaves, for garnish

Directions

  • To prepare the rhubarb syrup, simmer 1 cup chopped rhubarb with ½ cup water and ¼ cup honey in a saucepan over medium heat for 10 minutes, until the rhubarb softens. Strain and cool.
  • In a large pitcher, mix the brewed green tea, rhubarb syrup, honey, orange juice, and lemon juice. Stir well until combined.
  • Chill the mixture in the refrigerator for at least 1 hour.
  • Just before serving, add the sparkling water and stir gently.
  • Fill glasses with ice cubes and pour the punch over the ice.
  • Garnish with orange and lemon slices, along with fresh mint leaves.
