Ingredients


  • 1 cup granulated sugars

  • 1/2 cup light corn syrup

  • 1/4 cup water

  • 1 cup unsalted peanuts (raw or roasted)

  • 2 tablespoons unsalted butter

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking soda

  • A pinch of salt (optional)

Directions

  • Prepare a Baking Sheet
    Line a baking sheet with parchment paper or a silicone mat to prevent the brittle from sticking
  • Cook the Sugar Mixture
    In a medium-sized saucepan, combine the granulated sugar, corn syrup, and water. Stir over medium heat until the sugar has dissolved.
  • Add the Peanuts
    Once the sugar mixture is boiling, add the peanuts and continue to cook, stirring occasionally.
  • Monitor the Temperature
    Use a candy thermometer and cook the mixture until it reaches 300°F (hard crack stage), about 10-15 minutes. Stir the peanuts occasionally.
